Thai chicken bowl

4 Servings, Each Counts as: 3 Life Proteins, 3 Life Carbs, 4 Life Fats 


Ingredients 
2 cups brown rice
2 cups diced rotisserie chicken 
1 cup carrots 
1 cup red pepper
1 cup sliced cucumbers
1 cup sliced purple cabbage 
16 snap peas 
cilantro 
For sauce: 
1/4 cup creamy peanut butter
2 tbsp sesame oil
2 tbsp rice wine vinegar
1 tbsp tamari sauce
1 tsp dry cilantro 
lime juice
1 garlic clove
1 tsp fresh ginger 
1 tsp sriracha sauce
2 tbsp warm water
1 tbsp honey 

Directions
1. In a bowl combine peanut butter, sesame oil, rice wine vinegar, tamari sauce, cilantro, fresh lime, garlic, clove ginger, sriracha sauce, and water. Whisk until smooth and combined. 
2. To serve measure out 1/2 cup rice, 1/2 cup chicken, 1/4 cup veggies, and drizzle with peanut dressing.
