Broccoli Pesto Pasta

4 Servings, Each Counts as: 1 Life Protein, 5 Life Carbs, 8 Life Fats 


Ingredients
1/3 cup walnuts halved
1/2 cup fresh basil leaves 
1 clove garlic, smashed
1 1/2 cups chopped raw broccoli florets
1/4 cup low sodium vegetable broth 
1/4 tsp nutmeg
1/4 tsp red pepper flakes
salt
1 tbsp lemon juice
2 tbsp olive oil 
3 tbsp grated Romano cheese 
10 oz whole wheat fusilli 

Directions
1. Preheat oven to 350 degrees. 
2. On a baking pan spread nut and toast for 5 minutes. 
3. In a food processor pulse together 1/4 cup walnuts, garlic, broccoli, and basil. 
4. Add broth, nutmeg, red pepper flakes, salt, and lemon juice. Pulse until combined. 
5. Gradually add olive oil. Add cheese and pulse to combine. 
6. Prepare pasta according to box. Reserve 1/2 cup of cooking liquid. 
7. Combine pasta with pesto and some of cooking liquid. 
8. Add salt and serve with remaining cheese, walnuts, and basil.
