Broccoli & Cheddar Stuffed Chicken

1 Serving, Counts as: 6 Life Proteins, 3 Life Fats

Ingredients:

6oz boneless-skinless chicken breast
1/4 cup chopped broccoli

2 Tbsp red bell pepper, chopped
1 to 2 garlic cloves, minced, divided
1-ounce reduced fat cheddar cheese
1/4 tsp black pepper

Directions:
1. Use meat mallet to pound chicken breast until 1/4 inch thick.
2. In a small bowl, combine broccoli, red pepper, cheddar and half of the garlic. Mix well.

3. Place chicken on piece of aluminum foil that has been coated with cooking spray.
4. Sprinkle chicken with pepper.
5. Place broccoli mixture in middle of chicken and roll up chicken.
6. Top chicken with remaining clove of minced garlic.
7. Roll chicken in foil to help keep it together, refrigerate for 1 hour until set.
8. Preheat oven to 375 degrees F.
9. Place chicken foil packet on baking sheet and bake 20 minutes.
10. Cut a slit in to the top of foil packet and place back in oven for 5 minutes, to brown top of chicken and garlic.
11. Serve immediately.
