Honey Mustard Brussel Sprouts

4 Servings, Each Counts as: 1 Life Protein, 3 Life Carbs, 4 Life Fats


Ingredients
1 lb Brussel Sprouts
1/3 cup slivered almonds
1/3 cup tart dried cherries, chopped
1/3 cup low-fat shredded parmesan cheese
1/4 cup olive oil
2 tbsp apple cider vinegar
1 tbsp honey
1 tbsp dijon mustard
1 garlic clove, minced
1/4 tsp salt

Directions
1. Cut off the tough ends of the sprouts and cut in a food processor. 
2. In an oven over medium heat, toast almonds for three to four minutes, stirring frequently, until they are fragrant and turning golden on the edges.
3. Whisk together the olive oil, vinegar, honey, mustard and garlic until blended. In a medium serving bowl, toss the shredded sprouts with the almonds, chopped dried fruit, Parmesan and dressing and enjoy!
