Green bean casserole

8 Servings, Each Counts as: 1 Life Carb, 2 Life Fats 


Ingredients
4 strips of bacon, diced
1 1/2 cups sliced mushrooms 
2 garlic cloves, minced 
1 lb. fresh french green beans
1 large shallot, thinly sliced 
1 tbsp arrowroot powder
1 cup coconut oil 
salt & pepper 

Directions 
1. Heat skillet over medium high heat. Add bacon and sauce until crisp for about 4-5 mintues. 
2. Place bacon on a paper towel lined plate. 
3. On the same pan, add mushrooms and saute until browned. Remove from pan 
4. On the same pan, add garlic, and green beans. Saute until slightly browned (7-9 minutes). Reduce to low heat and cook for 5 more minutes. 
5. Add bacon, mushrooms, salt and pepper to the pan. Mix and reduce to low heat. Cook for 5 minutes. 
6. In a ziplock bag combine sliced shallots and arrowroot. 
7. Heat coconut oil in a saucepan on high heat. Add shallot to pan in batches. Fry for 3-4 minutes. Remove from oil and place on a paper towel-lined plate. 
8. Mix shallots with green beans and serve.
