Zucchini pasta

4 Servings, Each Counts as: 1 Life Protein, 2 Life Carbs, 6 Life Fats


Ingredients
Zucchini noodles
salt
5 medium tomatoes
1/4 cup olive oil 
1/2 clove garlic, chopped
1 tsp chopped jalapeno pepper
ground pepper
1/4 cup chopped pine nuts
1/4 cup chopped fresh basil 
1 tsp chopped fresh oregano 

Directions
1. Pure one tomato with olive oil, garlic, jalapeno, and 1/4 tsp salt and pepper in a food processor. 
2. Chop remaining tomatoes and combine with sauce in a bowl 
3. Add pine nuts, basil, oregano, and salt with sauce. 
4. Serve zoodles with tomato sauce, pine nuts, and a drizzle of olive oil
